Throw it in the crockpot for 3-4 hours and viola! You can shred it and freeze in smaller portions, thawing as you need. SOOO much better than lunch meat for the family. It's 1/4 cup raw nuts (cashews are my fav), 1/4 raisins, and a banana. You food process the nuts and raisins together till they start to stick together and then prss them into a plate, cupcake mold, or any shallow dish you like and set it in the fridge for 15 mins. Purée half the banana, spread that on the set crust and slice the rest of the banana on top... You won't believe how good it tastes! It is high in calories (410) but all good fat and sugar, plus a ton of fiber! Ideas...Girl I am so proud of you. Like Mama-proud!<br /><br />Ideas for lunch: pita pockets filled with a homemade chicken salad w/dried cranberries and chopped apples in it. Throw out the Capri Suns (sorry, just do it fast and it won't hurt as much). Make your own pre-packaged items of healthier stuff. Get the small snack size ziplocs and make your own mixes of pretzels, whole wheat crackers, etc. Then when it is time to make lunches, they are prepackaged and ready to go. How about homemade apple sauce infused with yummy cinnamon? Do you have a dehydrator? You can make yogurt leathers...or dried apple rings. Hummus is easy to make and goes great with veggie spears. Some of that homemade spaghetti sauce would be great with some breadsticks if you make breadstick dough in a breadmachine (or by hand).
